清江鱼茄子煲 <br>所属菜系粤菜 <br>所属类型特色粤菜 <br>基本特点请阅 <br>基本材料清江回鱼一条、茄子 <br>调料：盐、味精、鸡精粉、李锦记老抽、海天生抽、胡搅粉<br>料头：葱段、红椒片、荆沙豆瓣酱、姜米、朝天干尖椒。<br>制作：<br>1、将清江肥鱼放在85度的水中刷洗去掉表面的黑末，然后顺身改刀成筒状备用。<br>2、茄子去皮改刀切条状备用。<br>3、将茄子拉油倒出备用。<br>4、锅中下姜粒、豆瓣酱、炒出红油。下清江回鱼，煸炒出香味。下清水，大火烧至汤奶白色，开始调味。下茄子，干尖椒小火烧至入味后将汤汁收敛。下老抽调色及勾芡，亮油起锅，装入烧好的煲仔中。表面撒上葱段和红椒片。<a id=[[]][[]]></a>
